![]() I don't usually make New Year's resolutions as I prefer to set goals all through the year. However, this year I am really trying to focus on making healthy choices. Healthy physical choices, healthy spiritual choices, healthy emotional choices. One of the best ways to make healthy choices is to set a beautiful representation of those choices where you can frequently see it. This is such a delicious recipe from the magazine Bon Appetite. Seriously. So good. I didn't include it in the recipe, but I did include garlic in the image because I add it to mine but it isn't in the original recipe. You can add it according to your own garlic preferences. This recipe says it is two servings worth. I don't try to double or triple it because you only want a single layer on the cookie sheet. Let me know in the comments what you want me to create next! 8 ounces cauliflower sliced horizontally 2 Tbsp melted butter 1 Tbsp Olive Oil Pinch (or two ;) ) of mineral salt 1/2 Cup Parmesan cheese 1 tsp chopped parsley Preheat oven to 400°. Toss the sliced cauliflower with melted butter and olive oil. Sprinkle with salt and black pepper before arranging the cauliflower in a single layer on a baking sheet,. Roast for about 20-30 minutes. Remove from the oven to dust the now roasted cauliflower with Parmesan cheese and parsley. Return to the oven until the cheese caramelizes and is scrumptiously crusty, about 5 minutes. Remove from oven and serve immediately.
